Greek griddled chicken
This dish was demonstrated at the market on the 12th December 2009.
Ingredients - to serve 2
Two chicken breasts - available at Jim Ryans butcher counter
1 clove garlic, finely chopped - available at the Spud Man's stall
1/2 fresh chilli - finely chopped - available at the Spud Man's stall
juice and rind of 1/2 lime
1 teaspoon of honey - available at the Pantry
2 teaspoons of olive oil - available at the Pantry or at the Real Olive company stall
salt and pepper
Mix all the marinade ingredients together
Slice the chicken into strips and add to the marinade - do not leave for longer than 15 minutes.
Heat the griddle or the frying pan
Add the chicken to the pan - if you have a small pan, do this in two batches
cook on each side for approximately 2-3 minutes. You can check to see if it is fully cooked by cutting the strip in two - if the middle of the strip is fully white with no hint of pink or opaqueness to it, then the food is cooked.
Serve with a Greek salad and baked potato
